Italian Chicken Parmigiana

Cut chicken breasts in half to create thin cutlets.
Wrap cutlets in plastic wrap and pound them to about half an inch thickness.
Pat chicken cutlets dry with a paper towel.
Season both sides of the cutlets with salt and pepper.
Whisk together egg and flour in a shallow dish until smooth.
Mix together panko breadcrumbs, oregano, and garlic powder in another shallow dish.
Dip each cutlet into the egg mixture, then press into the breadcrumb mixture.
Heat 1/3 cup vegetable oil in a pot over medium-high heat.
Fry two cutlets at a time for about 2-3 minutes on each side until crispy.
Transfer fried cutlets to a baking sheet with a lid.
Mix mozzarella and parmesan cheese together and sprinkle over the cutlets.
Broil cutlets in the oven for 2-4 minutes until cheese is melted and lightly browned.
In a saucepan, heat 1 tablespoon olive oil and sauté one chopped onion until translucent.
Add 3 cloves minced garlic, 1 teaspoon salt, and 1/4 teaspoon oregano, cooking until aromatic.
Stir in 14-ounce can crushed tomatoes and 28-ounce can petite diced tomatoes.
