Trim off any fat from the chicken breasts.
Cover chicken breasts with saran wrap and tenderize using a meat tenderizer or rolling pin until even thickness.
Season both sides of the chicken breasts with sea salt and black pepper.
Prepare an egg wash by mixing 1 egg with 1 tablespoon of water.
In a bowl, combine 1.5 cups of Italian breadcrumbs, 1 teaspoon of garlic powder, and 1 teaspoon of oregano.
Coat each chicken breast in the egg wash, then roll in the breadcrumb mixture, ensuring a good coating.
Spray a baking sheet or a 9x13 casserole dish with nonstick cooking spray.
Place the coated chicken breasts in the baking dish and bake in a preheated 350°F (175°C) oven for 25 to 30 minutes.
While the chicken is baking, prepare the marinara sauce by sautéing chopped onion in 2 tablespoons of olive oil until golden brown.
Add 2 teaspoons of garlic to the onions and sauté for another minute or two.
Add a pinch of red pepper flakes, 1 teaspoon of oregano, and salt to taste.
Stir in crushed tomatoes and bring the mixture to a boil, then add fresh basil and let simmer for a minute.
Check the internal temperature of the chicken, ensuring it reaches at least 165°F (74°C).
Spread marinara sauce over the baked chicken breasts, then top with shredded mozzarella and Parmesan cheese.
Return the dish to the oven for an additional 5 to 6 minutes until the cheese is melted.
