Italian Chicken Parmigiana

Heat 1 tablespoon of olive oil in a pot.

Add 1 chopped onion and 2 cloves of minced garlic to the pot and fry until the onions sweat down.

Add a pinch of chili flakes and a pinch of dried oregano to the pot.

Add 1 can of plum tomatoes to the pot and press them down with a wooden spoon.

Let the sauce cook gently and season with a tiny bit of sea salt and black pepper.

While the sauce simmers, prepare the chicken by placing it between parchment paper and bashing it to about 1 cm thickness.

Season flour with sea salt and black pepper in a bowl and mix.

Dredge the chicken in the seasoned flour, then dip it in egg, and finally coat it with breadcrumbs.

Heat oil in a skillet and fry the chicken for about 4 minutes on each side until golden brown.

Once cooked, drain the chicken on a plate lined with kitchen paper.

Blend the tomato sauce in a food processor until smooth.

Spread half of the tomato sauce on the bottom of a baking dish.

Place the fried chicken on top of the sauce and cover it with the remaining sauce.

Grate parmesan cheese and sprinkle it generously over the chicken.

Sprinkle a little water over the parmesan to help it melt.

Bake in an oven preheated to 250°C (450°F) until the cheese is melted and bubbly.

Serve with freshly cooked spaghetti drizzled with olive oil.
