In a separate bowl, blend two pieces of carrot with half a cup of milk until smooth, then add this mixture to the corn.
Add sugar, ground cinnamon, salt, and anise to the corn mixture.
Incorporate two egg yolks and melted butter into the mixture and mix well until combined.
Add cheese to the mixture, ensuring it is evenly distributed throughout.
Let the mixture rest for 15 minutes before assembling the humitas.
Prepare the corn husks by cutting them into larger pieces for wrapping the humitas.
Blanch the corn husks in boiling water for five minutes, then drain them for easier handling.
Begin assembling the humitas by placing a spoonful of the corn mixture onto a corn husk, adding a piece of cheese, and folding the husk to form a triangular shape.
Continue assembling until all the mixture is used, placing any extra mixture in a baking dish.
Preheat the oven to 360°F (180°C) for 25 minutes before baking the humitas.
Place the assembled humitas in the preheated oven and bake until cooked through.
