Rinse 500 grams of black beans under the tap.

Pour beans into the pressure cooker and add 2 liters of water.

Add 2 bay leaves and lock the lid in place.

Set the flame on high and then reduce to medium after sealing.

Pressure cook for 40 minutes.

To release steam, place the cooker in the sink, open the valve, and run cold water over it.

Once safe, open the lid and check that the beans are soft and the water is a matt chocolatty brown.

Roughly chop 1/2 onion and 3 cloves of garlic.

In a frying pan, add 1 tablespoon of vegetable oil and fry the onion and garlic until they gain color.

Pour in 2 or 3 ladlefuls of beans and stir to combine flavors.

Transfer the mixture back to the pressure cooker, add salt to taste, and simmer for another 10 minutes.

If not using a pressure cooker, soak the beans overnight in a large bowl of water.

The next morning, discard the soaking water and transfer the beans to a large saucepan with 2 liters of water and 2 bay leaves.

Cook on medium heat for 2 hours or until the beans are soft and the water is a matt chocolatty brown.

Repeat the onion and garlic steps, add salt to taste, and simmer for 10 minutes.
