In a saucepan, pour water or milk and set over medium-high heat for about 2-3 minutes, then turn off heat, add bread flour, and quickly stir until a thick and smooth paste forms to make the roux.

Place the milk roux, cold milk, Greek yogurt, sugar, yeast, and bread flour into a large bowl. Use a spatula to stir until combined.

Knead the dough for about 10 minutes, adding a few drops of vegetable oil, until the dough is smooth and elastic.

Put the kneaded dough in a lightly oiled bowl and allow it to rise in a warm place until doubled in size, about 30 minutes to 1 hour.

After the first fermentation is done, punch down the dough to knock out all the air. Divide into 16 pieces, forming each into a ball. Roll into a long sausage shape, optionally adding filling, and roll over.

Let the dough rise again until almost doubled in size, about 30 minutes.
