2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons chili powder
1 teaspoon garlic powder
1 tablespoon avocado oil
3 medium-sized chicken breasts

Peel the sweet potato and chop it into bite-sized cubes.

Spread the sweet potato cubes on a greased baking sheet.

Chop the apples into pieces (no need to peel) and add them to the baking sheet.

Cut the florets off of the broccoli, wash it, and set aside (do not add to the baking sheet yet).

In a bowl, mix together 3/4 cup apple juice, 2 tablespoons honey, 1 tablespoon Dijon mustard, 1/2 teaspoon salt, and 1/2 teaspoon crushed red pepper flakes to create a glaze.

Take out 3 tablespoons of the glaze for later use on the chicken.

Pour the remaining glaze over the sweet potatoes and apples, and toss to coat.

Sprinkle seasoning salt over the veggies on the baking sheet.

Preheat the oven to 400°F.

In a separate bowl, mix together 2 tablespoons brown sugar, 1 teaspoon salt, 1/2 teaspoon pepper, 2 teaspoons chili powder, 1 teaspoon garlic powder, and 1 tablespoon avocado oil to create a rub for the chicken.

Coat one side of the chicken breasts with half of the rub mixture.

After 20 minutes, remove the baking sheet from the oven, toss the veggies, and add the broccoli, coating it with some of the glaze.

Make space in the middle of the baking sheet and place the chicken breasts seasoned side down.

Coat the other side of the chicken with the remaining rub and drizzle the saved glaze over the chicken.

Return the baking sheet to the oven and roast for an additional 20 to 30 minutes, ensuring the chicken reaches an internal temperature of 165°F.
