Go to a Chinese supermarket to find fresh noodles, preferably Twin Marquis wonton noodles.

Gather ingredients: black Chinese vinegar, light soy sauce, sesame seeds, white rice vinegar, salt, pepper, sugar, sesame oil, sesame paste, and hot oil.

Chop scallions, separating the white and green parts, and chop cilantro.

Mince garlic.

Heat a pan with a splash of oil, add half of the white parts of scallion and half of the garlic, and cook for 30 seconds to a minute.

Add ground beef to the pan and brown for about three minutes, seasoning with salt and pepper.

Set the cooked beef aside.

In a bowl, mix one heaping tablespoon of sesame paste, a couple teaspoons of sesame oil, two tablespoons of soy sauce, one teaspoon of sugar, and one tablespoon of black Chinese vinegar.

If the sesame paste is clumpy, heat it in the microwave first.

Boil a pot of water with a couple tablespoons of white vinegar.

Cook the noodles in boiling water, then drain and rinse with cold water to stop cooking and wash off starch.

Transfer the noodles to a bowl, top with the cooked beef, remaining garlic, and white parts of scallions.
