Preheat the oven to 300 degrees Fahrenheit.

Season the inside of the chicken with salt and pepper, adding a quarter of a lemon and half of the garlic inside.

Place thick onion slices in a 12-inch cast iron pan and put the chicken on top, breast side up.

Cook the chicken in the oven for 2.5 to 3 hours until it reaches 160-165 degrees Fahrenheit in the breast.

While the chicken is cooking, prepare the matzo balls by beating 2 eggs in a bowl.

Add 1/4 cup of avocado oil to the eggs and mix well.
