fish sauce

🥗Healthier: low-sodium soy sauce

💰Cheaper: regular soy sauce

Low-sodium soy sauce reduces sodium intake while maintaining umami flavor.

chicken

🥗Healthier: tofu

💰Cheaper: canned chickpeas

Tofu provides a plant-based protein alternative, while chickpeas are budget-friendly.

1

Tear the kaffir lime leaf in a few places to release its aroma, being careful not to tear the spine.

2

Cut the last six inches of the lemongrass stalk, bruise it with the back of a knife to release flavors, and slice it into smaller pieces.

3

If you don't have kaffir lime leaf or lemongrass, peel a lime and use the peel as a substitute for both.

4

Add chicken stock to a pot along with the bruised kaffir lime leaf, lemongrass, a few slices of fresh ginger, and a couple of slices of hot chili pepper.

5

Simmer the aromatics in the chicken stock for about 10 minutes, then strain and discard them.

6

Add the boneless skinless chicken thigh to the infused chicken stock and simmer until the chicken is cooked through.

7

Once the chicken is cooked, add freshly squeezed lime juice to the soup.

8

Stir in fresh cilantro leaves once the soup is done cooking.
