Start by making the marinade for the meat.

Combine 150g of lean cut beef with a pinch of salt, 1 teaspoon of Korean soy sauce, 1 teaspoon of minced garlic, 1 teaspoon of brown sugar, 1/4 teaspoon of beef bouillon powder, 1 teaspoon of sesame oil, and 1/8 teaspoon of black pepper.

Mix the marinade well with your hands for about a minute.

Spread 3 tablespoons of room temperature butter evenly over a sheet pan, or use parchment paper for a lighter option.

Preheat the oven to 375°F.

Fill the sheet pan with 8 cups of cooked Korean rice, making sure to create two holes in the middle without crushing the rice grains.

On one side of the pan, add the marinated beef, spreading it evenly.

On the other side, add 3 eggs (or plant-based eggs for a vegan option) and sprinkle a little salt on top.

Place the pan in the oven on the middle rack and bake for 20 to 25 minutes.

Prepare the vegetables: season 50g of julienned carrots and 100g of mung bean sprouts with a pinch of salt and a drizzle of olive oil, then mix.

In a separate bowl, add 100g of shiitake mushrooms, a pinch of salt, 1/2 tablespoon of soy sauce, 1/4 teaspoon of garlic powder, and some chopped green onions. Mix well.

Add 50g of baby spinach to another bowl with a pinch of salt, remaining green onions, and a drizzle of sesame oil. Toss gently.

After 20 minutes, check the beef and eggs in the oven.

Place the carrots, mushrooms, mung bean sprouts, and spinach on the corners of the baking sheet.

Cover the sheet pan with aluminum foil and return it to the oven for another 10 to 15 minutes to steam the vegetables.

Once done, remove from the oven and add Gochujang sauce over the top.

Optionally, add kim crumbles and avocado chunks as toppings.

Mix everything together before serving.
