Cultural Context

Dahl Puri Roti is a beloved dish in Guyana, rooted in the culinary traditions of Indian indentured laborers who settled in the Caribbean. This flatbread is filled with a spiced mixture of yellow split peas, showcasing the fusion of Indian and Caribbean flavors. It is often enjoyed with curries or chutneys, making it a staple for gatherings and celebrations. 1

Wash the split peas and rinse them about twice.

2

Boil 3-4 cups of water with 1/2 teaspoon of salt.

3

Add the split peas to the boiling water and cook for 20-25 minutes, checking gradually.

4

While the peas are boiling, mix the flour, baking powder, and salt in a bowl.

5

Gradually add water to the flour mixture, creating a sticky but soft dough by squeezing it together.

6

If the dough gets too sticky, add a little flour to adjust the consistency.

7

Coat the dough with a little oil and cover with a clean tea towel to rest for 15-20 minutes.

8

After boiling, drain the split peas in a colander and place them on paper towels to cool for about 10-15 minutes.

9

In a food processor, grind the cooled split peas with garlic cloves and half of the scotch bonnet pepper (without seeds).

10

Add 1/2 teaspoon of salt, 1/4 teaspoon of ground cumin, 1/2 teaspoon of garam masala, and 1/2 teaspoon of thyme to the ground mixture and mix well.

11

After resting, knead the dough one last time and divide it into 12 equal dough balls.

12

Roll out each dough ball, stretching it wide, and fill it with about 1.5 tablespoons of the split pea mixture.

13

Seal the edges of the dough to enclose the filling and roll it out gently on a floured surface.
