Thai Peanut Noodles

8 oz rice noodles
1/2 cup creamy peanut butter
1/4 cup soy sauce
2 tbsp lime juice
2 tbsp honey
1 tbsp sesame oil
2 cloves garlic, minced
1/2 tsp red pepper flakes
1/4 cup chopped green onions
1/4 cup chopped cilantro
1/4 cup crushed peanuts (for garnish)

Cook the rice noodles according to package instructions. Drain and set aside.

In a large bowl, combine the peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and red pepper flakes. Mix until smooth.

Add the cooked noodles to the bowl with the peanut sauce. Toss until the noodles are well coated.

If the sauce is too thick, add a little warm water to reach desired consistency.

Stir in the chopped green onions and cilantro, mixing well.
