Cut 8 chicken tender loins into long strips.
In a bowl, add 1 tablespoon of sesame oil, salt, black pepper, 1 tablespoon of chopped cilantro, 1 teaspoon of grated fresh ginger, and 2 cloves of pressed garlic; mix well.
Cover the bowl and refrigerate for at least 1 hour to marinate.
Cook 12 oz of fettuccine according to package instructions; drain and shock with cold water to stop cooking.
In a separate bowl, mix together 1/2 cup of soy sauce and 2 tablespoons of rice vinegar; set aside.
Heat 1/2 tablespoon of sesame oil in a pan; add 2 carrots cut into long thin pieces and 10 diagonally sliced snow peas; stir-fry for about 2 minutes.
Add 6 chopped garlic cloves and 1 tablespoon of grated fresh ginger to the pan; sauté for about 5-6 minutes, stirring often.
Return the marinated chicken to the pan and add the cooked fettuccine; toss to mix well with the chicken and vegetables.
Pour the sauce over the mixture and mix thoroughly to coat everything with the peanut sauce; cook for a couple more minutes until heated through.
