Noodle box copycat Thai peanut noodles recipe

Cook the rice noodles according to package instructions. Drain and set aside.

In a large bowl, combine the peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and red pepper flakes. Mix until smooth.

Add the cooked noodles to the bowl with the peanut sauce. Toss until the noodles are well coated.

If the sauce is too thick, add a little warm water to reach desired consistency.

Stir in the chopped green onions and cilantro, mixing well.

Serve the noodles in bowls, garnished with crushed peanuts and additional cilantro if desired.
