Chop the root off 2 green onions and split them in half, separating the greens and whites.

Mix everything by hand or with gloves for about 1-2 minutes until evenly combined.

To test the seasoning, cook a small dollop of the pork mixture in a hot pan for 2 minutes on each side and taste.

In a small container, combine 65 grams of soy sauce, 65 grams of mirin, 10 grams of chili crisp solids, 1 teaspoon of sesame seeds, and 1 and 1/2 teaspoons of the reserved green onion greens. Mix thoroughly to create the dipping sauce.

Take a dumpling wrapper and place 1 tablespoon of pork mixture in the center.

Spread the pork mixture across the wrapper edge to edge with the back of a spoon.

Wet your fingers and run them along one half of the dumpling wrapper, then fold the wrapper over to seal it, squeezing out air and crimping the edges.

In a large skillet, heat a small dollop of avocado oil over medium-high heat.

Place the dumplings meat side down in the skillet and cook for 2-3 minutes until a nice crust forms.
