Open the jar of fresh oysters and clean them up.
In a bowl, add 1 egg, cracked black pepper, and a pinch of sea salt, then beat the egg.
Add 1/3 cup of buttermilk to the egg mixture.
Add 2 tablespoons of regular milk to thin the mixture out and mix well.
Drop the oysters into the egg mixture and let them soak for 20 to 30 minutes in the refrigerator.
In a food processor, blend 10 saltine crackers and 9 or 10 club crackers until finely crushed.
In a bowl, mix the crushed crackers with 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/3 cup of seasoned panko crumbs.
Test the oil by dropping a small piece of the breading into it; if it bubbles, the oil is ready.
Drain the oysters from the egg mixture and coat them in the cracker mixture, ensuring they are well coated.
Fry the oysters in the hot oil until golden brown, then remove and drain on paper towels.
Serve the fried oysters with lemon and cocktail sauce.
