Rinse the oysters briefly and reserve about 2 tablespoons of the liquid from the jar.
Inspect the oysters and cut any that are too large in half to ensure they are all roughly the same size.
Cover the oysters in buttermilk and add hot sauce, mixing well, and let them marinate for about 30 minutes.
In a separate bowl, combine 2 cups of pancake mix, ½ cup of yellow cornmeal, and 2 tablespoons of corn starch (optional) for extra crunch.
Add 1 tablespoon of black peppercorn, 1 tablespoon of onion powder, ½ tablespoon of garlic powder, 1 tablespoon of Old Bay seasoning, ½ tablespoon of Slap Ya Mama Creole seasoning, 1 teaspoon of Accent seasoning, a few dashes of smoked paprika, and ¼ teaspoon of cayenne pepper to the dry mixture and mix well.
Remove the oysters from the buttermilk mixture, allowing excess to drain off, and coat them in the breading mixture, shaking to ensure they are well coated.
Preheat a cast iron skillet with oil to about 350°F.
Fry the oysters in batches in the hot oil until golden brown, then transfer them to a wire rack to keep them crispy.
Serve the fried oysters with lemon wedges and hot sauce, or other condiments like tartar sauce or Creole mayo.
