Mexican Beef Tamales

Soak corn husks in water for a couple of hours until pliable.
In a mixing bowl, beat lard with some beef stock to soften it.
Add salt and baking powder to the lard mixture and mix.
Incorporate the dry ingredients into the lard mixture using hands until crumbly.
Gradually add beef stock to the mixture to form a spongy dough.
Spread masa mixture onto the center of each corn husk.
Add a teaspoon of salsa verde and some beef birria on top of the masa.
Fold the sides of the husk over the filling, then fold up the bottom.
Place tamales upright in a steamer basket with the open end facing up.
Add water to the pot beneath the steamer basket and cover with a cloth to retain steam.
Steam tamales for about 1.5 hours, checking for doneness.
