South African Jam Squares

Coconut oil adds a subtle flavor and is dairy-free.

Fruit preserves offer a more natural option with less sugar.
Blend the butter and sugar until pale and creamy using a wooden spoon or hand blender.
Add room temperature eggs and blend for 5 to 6 seconds until combined.
Add vanilla extract and blend until just combined to avoid overmixing.
Sift in the flour and baking powder into the mixture.
Manipulate the mixture until it forms a dough without applying too much pressure.
Set aside one cup of the dough in the freezer for 30 minutes, or 1 hour if using the fridge.
Grease the baking pan or line it with nonstick baking paper.
Make a base with the remaining dough, flattening it with hands or a flat object.
Cover the base with cling wrap and place it in the fridge.
Preheat the oven to 180°C (356°F) or 160°C for a conventional oven.
Fill the dough base with jam of your choice.
Grate the frozen dough over the jam to cover the whole surface.
Bake for 15 to 20 minutes until golden brown and cool entirely in the pan.
Cut into 12 pieces.
