Season the oil with garlic, pimento, thyme, and a scotch bonnet pepper while heating it.
In a shallow dish, combine all-purpose flour with adobo, cayenne, garlic powder, onion powder, complete seasoning, paprika, and black pepper, mixing well.
Coat each marinated chicken piece in the seasoned flour mixture, ensuring it's fully covered and pressed into the chicken.
Carefully place the coated chicken pieces in the hot oil, avoiding overcrowding the pan, and fry until golden brown and cooked through, about 12 to 15 minutes.
Remove the chicken from the oil and place it on a wire rack to drain excess oil.
Prepare the barbecue sauce by mixing honey barbecue sauce, duck sauce, ketchup, brown sugar, complete salt, black pepper, and red pepper flakes until well combined.
Dip the fried chicken in the barbecue sauce to coat properly.
Optionally, preheat the oven to 350°F and bake the coated chicken for 10 minutes to allow the sauce to soak in, or reduce the sauce in a saucepan until thickened before coating the chicken.
