8 chicken thighs

Marinate chicken thighs with chamula, reserved lemon, cilantro, turmeric, ginger, and cumin.

Place chicken thighs directly into the tajine with skin side down.

Chop onion and garlic, then add them on top of the chicken.

Add chopped carrots, tomato, and beans on top of the chicken and onions.

Sprinkle the remaining chamula evenly over the top of the ingredients.

Add a little water over the top of the vegetables to help season them.

Cover the tajine and cook on low heat for about 3 hours without stirring.

Check the tajine periodically to ensure it is bubbling and not overflowing.
