Moroccan Tagine

Cut the meat into chunks about 1 inch big using a sharp knife.

Chop the onions and garlic into small pieces or use a food processor, being careful not to overprocess.

Measure out the spices: ginger, cumin, cinnamon, turmeric, paprika, and pepper.

Heat olive oil in a tajine pot (or regular pot).

Add the meat to the pot and cook until browned on all sides.

Add the chopped onions and garlic to the pot and cook until soft.

Add the measured spices to the pot and stir everything together.

Add chopped tomatoes to the pot and stir.

Add water or broth to the pot to create a sauce and stir to combine.

Bring the mixture to a boil to release flavors from the spices and vegetables.

Turn the heat down to low and let the tajine simmer for at least an hour.

Prepare the dried apricots by cutting them in half and pit the olives if necessary.

After an hour, add the apricots and olives to the tajine and stir gently.

Continue to simmer for another 30 minutes until the meat is very tender.

Serve the tajine hot with couscous or bread, garnished with fresh cilantro and parsley.
