Moroccan Tagine

100 grams sunflower oil
2 tomatoes
15 grams green onion
2 small or 1 big pepper
salt to taste
1 teaspoon oregano
1/2 teaspoon sweet paprika
4 eggs
black pepper to taste

Heat 100 grams of sunflower oil over low heat.

Fry 2 tomatoes for 2-3 minutes, stirring from time to time.

Add 15 grams of green onion and 2 small or 1 big pepper, and fry for 5-7 minutes over low heat.

Add salt and 1 teaspoon of oregano, and mix well.

Add 1/2 teaspoon of sweet paprika and fry for another minute.

Create some space in the pan and crack 4 eggs into it.

Season with salt and black pepper to taste.

Fry for 3-4 minutes for runny yolks or 7 minutes until eggs are set.

Garnish with parsley to taste.
