Sort through 1 cup of red kidney beans to remove any bad beans or debris.

Wash the beans thoroughly with lukewarm water, scrubbing them clean.

Add 17 cups of water to the pot with the beans and put it on high heat.

Add 2 garlic cloves, 1 chopped green onion, and 1 tablespoon of vegetable oil to the pot.

Cover and let it cook for 1 hour and 30 minutes, checking for doneness.

If beans are not cooked, add 5 more cups of water and cook for an additional 30 minutes.

Once cooked, strain the beans but reserve the cooking water.

Prepare Epi seasoning by blending bell peppers, garlic, green onion, parsley, and a Bonet pepper with 1-2 tablespoons of vegetable oil.

In a separate pot on medium-high heat, add 1/2 cup of vegetable oil and 2-3 tablespoons of Epi seasoning, cooking for 2-3 minutes.

Add the cooked beans to the pot and mix, cooking for 1-2 minutes.

Add 1 cube of chicken flavored bouillon and 2 teaspoons of salt, mixing well.

Add 1 teaspoon of adobo, thyme, and parsley tied together, and a Bonet pepper, cooking for 1 minute.

Pour in coconut milk and let it cook, stirring occasionally.

Add 5 cups of the reserved bean cooking water to the pot for color.

Wash jasmine rice and add it to the pot, stirring to combine.
