1

Peel an entire cucumber.

2

Grate the cucumber and add it to a clean bowl with some white wine vinegar and a pinch of coarse salt. Mix and set aside to marinate.

3

Add a small clove of garlic to a food processor with a little bit of olive oil and blend until fine pieces are formed.

4

In another bowl, add plain creamy Greek yogurt, then add the garlic and olive oil mixture.

5

Throw in a healthy amount of dill and some more coarse salt and black pepper to taste. Fold everything together until mixed well.

6

Strain the cucumber by dumping it over a towel and ringing it out into another bowl, discarding the juice.

7

Add the strained cucumber to the yogurt mixture with a little bit of white wine vinegar and fold it in carefully.

8

Transfer the mixture to a clean bowl and refrigerate to let it marinate and thicken.
