Add flour and salt to the bowl of a stand mixer.
Stir with the hook attachment for about 20 seconds.
Whisk the eggs in a separate bowl.
Add milk, lightly whisked eggs, and warmed honey to the mixer.
Add yeast and stir with the hook attachment again.
Add melted butter and mix for around 5 minutes until a smooth, elastic dough forms.
Form the dough into a ball and spray the bowl with non-stick spray.
Cover the dough and let it rise for around 2 hours until doubled in size.
Peel and quarter the pears.
Transfer the dough to a working surface and shape it into a rectangle.
Place a piece of pear on the dough and cut around it to create squares.
Pinch the corners of the dough to seal the pear inside.
Arrange on a silicone mat or parchment paper on a baking sheet.
Separate the egg and use only the yolk, adding around 2 tablespoons of honey to it.
Whisk the egg yolk and honey together for a glaze.
Brush the glaze on the rolls and sprinkle with cinnamon.
Cover and let rise for 15-20 minutes.
Preheat the oven to 180°C (350°F).
Bake for around 20 minutes, covering them to prevent over-browning.
Once baked, pour more honey on top while still hot.
