4 bacon strips, cut into lardons
1 sliver of unsalted butter
1 yellow onion, diced
2 celery ribs, chopped
2 large Russet potatoes, peeled and cubed
3 cloves garlic, minced
1 teaspoon chili powder/red pepper flakes (to taste)
1/3 cup all-purpose flour
2 cans (6 ½ ounces each) chopped clams, drained (liquids separated)
½ cups clam juice (in addition to the juice already in the cans)
2 cups chicken stock
½ cup water
Salt (to taste)
Pepper (to taste)
1 cup heavy cream
2 tbsp young celery leaves, chopped
2 tbsp flat leaf parsley, chopped
1 tbsp minced chives (optional)

In a medium pot, or Dutch oven, cook bacon on medium heat until crisp, approximately 5 minutes. Remove half of the bacon to a paper towel lined plate to drain. Remove half of the bacon grease from the pan. Add the butter.

Sauté the onions and celery on medium heat until they start to get some color, 5-7 minutes.

Add the potatoes, garlic, and chili pepper and cook for 1-2 minutes, stirring.

Add the flour to the mixture, stirring constantly for 30 seconds until it becomes absorbed.

Stir in the liquids and the salt and pepper. Bring to a boil and then simmer on low heat, uncovered for 15 minutes.

Stir the cream into the chowder and let simmer for 2 minutes.

Add the clams and cook for 1 minute until heated through.

Turn off the heat and add half of the parsley and celery leaves.

Ladle into bowls and garnish with remaining parsley, celery leaves, and crispy bacon. Chives are an optional touch.
