New England Clam Chowder

Cultural Context

New England Clam Chowder is a traditional dish from the northeastern United States, particularly associated with New England. It reflects the region's maritime culture and the abundance of clams in local waters. The creamy soup has become a staple in many seafood restaurants and is often enjoyed during colder months, though it can be served year-round. Variations exist, but the classic version is known for its rich, creamy texture and hearty ingredients.

cream

🥗Healthier: coconut milk

💰Cheaper: milk

Coconut milk is lower in calories and dairy-free, while milk is more budget-friendly.

bacon

🥗Healthier: turkey bacon

💰Cheaper: smoked sausage

Turkey bacon is lower in fat, and smoked sausage can be more affordable.

1

In a medium saucepan, fry the bacon until crisp, then remove the bacon and leave about two tablespoons of bacon fat in the pan.

2

Sauté the chopped onion in the bacon fat until translucent and about to caramelize, being careful not to brown the onions.

3

Add the chopped celery and diced potatoes to the pan and sauté for a minute or two; the potatoes will not be completely cooked at this point.

4

Add the entire canned clams with their juice into the saucepan, then clean out the cans with boiling water and add that water to the stock.

5

Add the remaining boiling water, blue powder, and fresh black pepper to the mixture.

6

Allow the chowder to simmer for 10 to 15 minutes until the potatoes start to lose their form and the chowder stock thickens.

7

Once the chowder has simmered, add the milk and allow it to heat.

8

Add the heavy cream and fried bacon to the chowder, being careful not to overcook the heavy cream as it will separate.

9

Serve the clam chowder with all the delicious fixings.
