Wash the thick carrots and set them aside.

Wash the yellow potatoes and set them aside.

Dry the 3 lb chuck roast thoroughly with paper towels.

Cut the onion into thick slices.

Season both sides of the roast with garlic butter seasoning, garlic and herb seasoning, black pepper, and about 2 teaspoons of kosher salt, massaging it in.

Heat a skillet over medium heat and add butter and olive oil.

Sear the roast in the skillet for about 4 to 5 minutes on each side until browned.

Sauté the vegetables for about 3 to 4 minutes, then remove them from the skillet.

Add 1-2 tablespoons of flour to the skillet and cook for about 30 seconds.

Add au jus gravy packet mixed with enough water to create gravy, along with a bit of sugar, half a tablespoon of Dijon mustard, Better Than Bouillon, and Maggie seasoning.

Stir in 2 tablespoons of tomato paste and about 2.5 cups of water, adjusting for desired gravy consistency.

Place 4 spring onions and 6 cloves of unminced garlic on top of the roast.

Add all the sautéed vegetables and leave the potatoes whole.

Add fresh rosemary, oregano, thyme, bay leaves, a small piece of cinnamon, and a few allspice berries.

Cover and slow cook for 7 to 8 hours without opening the lid.
