Beef pot roast has its roots in American home cooking, particularly popular in the Midwest. Traditionally a Sunday dinner dish, it symbolizes comfort and family gatherings. The slow-cooking method transforms tough cuts of meat into tender, flavorful meals, making it a staple in many households. Today, variations exist worldwide, with each culture adding its unique twist to the classic recipe.

Pork shoulder is often less expensive and can be used for a similar slow-cooked effect.

Grape juice can provide sweetness without alcohol, while beef broth is a cost-effective substitute.
Wash the thick carrots and set them aside.
Wash the yellow potatoes and set them aside.
Dry the 3 lb chuck roast thoroughly with paper towels.
Cut the onion into thick slices.
Season both sides of the roast with garlic butter seasoning, garlic and herb seasoning, black pepper, and about 2 teaspoons of kosher salt, massaging it in.
Heat a skillet over medium heat and add butter and olive oil.
Sear the roast in the skillet for about 4 to 5 minutes on each side until browned.
Sauté the vegetables for about 3 to 4 minutes, then remove them from the skillet.
Add 1-2 tablespoons of flour to the skillet and cook for about 30 seconds.
Pour in dry red wine and stir to combine.
Add au jus gravy packet mixed with enough water to create gravy, along with a bit of sugar, half a tablespoon of Dijon mustard, Better Than Bouillon, and Maggie seasoning.
Stir in 2 tablespoons of tomato paste and about 2.5 cups of water, adjusting for desired gravy consistency.
Place 4 spring onions and 6 cloves of unminced garlic on top of the roast.
Add all the sautéed vegetables and leave the potatoes whole.
Pour the gravy mixture over the roast and vegetables.
Add fresh rosemary, oregano, thyme, bay leaves, a small piece of cinnamon, and a few allspice berries.
Cover and slow cook for 7 to 8 hours without opening the lid.
After cooking, remove the herbs from the pot.
Cut the potatoes into quarters and season with salt before returning them to the pot.
Cut the carrots in half and serve with the pot roast.
