Prepare saffron water by steeping a large pinch of saffron in half a cup of hot water.

Make the marinade by mixing 2 tbsp harissa, 2 tbsp olive oil, 2 tbsp minced garlic, 1 tbsp salt, 1 tbsp pepper, 2 tbsp reserved lemon pulp, 1 tbsp garlic powder, 1 tbsp cumin powder, and 1/2 cup chopped parsley.

Add the saffron water to the marinade and mix well.

Marinate 6 chicken thighs (about 2 lbs) in the marinade, ensuring they are coated on both sides.

Heat oil in the tajine and add 1/2 cup chopped onion, 1 tbsp garlic powder, 1 tbsp paprika, and 1 tbsp cumin powder; mix and cook until the onion is soft.

Add the marinated chicken and all the marinade to the tajine, cover, and cook for 45 to 60 minutes, checking occasionally.

Once the chicken is cooked, add 1 cup of mixed beans, 6-8 olives, and the reserved skins of the preserved lemons; cover and cook for another 10 minutes before serving.
