500ml chicken stock
2 teaspoons of ground cumin
1 teaspoon of paprika
1/2 teaspoon of turmeric
1/2 teaspoon of cinnamon
1 tablespoon of honey

Preheat oven to 180C/375F.

Cut/crush the ginger, garlic and onion.

Cut the carrots and the zucchini.

In a pan, sauté the ginger, garlic and onion.

Add the chicken and the spices and cook until lightly brown.

Transfer to a casserole and add the carrots and the zucchini.

Add 1 tablespoon of honey (or maple syrup).

Cover with the chicken stock.

Cook in the oven for 60-90 minutes until tender.

You can remove the lid for the last 15 minutes of cooking.
