Prepare the ingredients: chop onion, scallions, bell pepper, and garlic. Measure out black pepper, ginger, tomato, pimento seasoning, garlic powder, salt, scotch bonnet pepper sauce, ketchup, and water.

Season the chicken thighs with ginger garlic pimento seasoning, salt, garlic powder, and black pepper. Mix well and allow to marinate for 2 hours to overnight.

Heat a skillet and sear the marinated chicken thighs until nice and brown on both sides.

Remove 75% of the oil from the skillet, then add chopped onions and sauté for about 10 minutes.

Add salt and pepper to the onions, and save fresh thyme for the last 10-15 minutes of cooking.

Add ketchup and scotch bonnet pepper sauce to the skillet, mixing well.
