Twice-Fried Plantain Tostones

Peel the dark brown plantains and remove any stringy bits.
Cut the plantains into thick slices.
Prepare a saltwater mixture with salt and water, letting it dissolve.
Heat about 1/4 inch of canola oil in a shallow pan.
Fry the plantain slices until they release themselves and are golden brown on one side, then flip to brown the other side.
Remove the plantains from the oil and place them on a plate.
Prepare a bowl of ice water with salt and add the fried plantains to shock them.
Flatten each fried plantain slice using a plate or spatula.
Pat the flattened plantains dry before frying them again in hot oil.
Fry the flattened plantains until they are dark brown and crispy.
Remove from oil and sprinkle with salt.
