Mix flour, sugar, salt, and dry yeast in a large bowl.
Add warm water and oil, then mix until a dough forms.
Knead the dough on a floured surface until smooth, about 5-7 minutes.
Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
Roll out the dough on a floured surface to about 1/4 inch thick.
Cut the dough into circles using a glass or cutter.
Place a spoonful of filling in the center of each circle (feta cheese mixture can be used).
Fold the dough over to create a half-moon shape and seal the edges.
Heat oil in a deep skillet over medium heat until shimmering.
Fry the scovergi in batches until golden brown, about 3-4 minutes per side.
Remove from oil and drain on paper towels.
Serve warm, optionally garnished with fresh dill.
