12 servings
Servings4
1 sheet puff pastry (thawed)
1 cup granulated sugar
1/2 cup unsalted butter (melted)
1/4 tsp salt
1

Superimpose two sheets of puff pastry.

2

Add sugar in between the sheets of puff pastry.

3

Roll out the pastry into a large rectangle, 20 inches (50 centimeters) long.

4

Use leftover inverted puff pastry for this recipe.

5

Add more sugar to achieve crispy texture through caramelization.

6

Give a single turn (business letter fold) to the pastry.

7

If making puff pastry from scratch, add sugar to the last turn and refrigerate for 1 hour to rest.

8

Roll out again into a larger rectangle, 25 inches (65 centimeters) long.

9

Trim off the edges of the rolled pastry.

10

Fold each side in towards the center, leaving a little space in the middle.

11

Wrap the folded pastry and let it rest in the refrigerator overnight.

12

Cut the rested pastry into half-inch portions.

13

Arrange the palmier cookies onto a baking tray lined with a silicone mat.

14

Bake for 20 minutes, then flip and bake again for an additional 10 minutes or until caramelization is achieved.
