French Palmier Cookies

1 tbsp (15g) butter
1 tbsp granulated sugar
1 cup (130g) all purpose flour
1/2 tsp salt
1 tsp lemon juice
1/4 cup chilled water
60g chilled butter
1/2 tsp all purpose flour

Mix 1 tbsp butter and 1 tbsp granulated sugar until combined.

Add 1 cup all purpose flour and 1/2 tsp salt, and mix well.

Add 1 tsp lemon juice and gradually add 1/4 cup chilled water.

Knead the dough until smooth, adding 1 tbsp water if required.

Cover the dough and leave it for 10 minutes.

Cut the dough into 4 equal parts.

Flatten the ends to make a rectangle.

Roll out the dough into a rectangular shape approximately 30cm x 10cm.

Mix 60g chilled butter with 1/2 tsp all purpose flour to absorb moisture.

Spread the butter evenly over the rolled-out dough.

Fold the dough into thirds for the first time, sprinkling flour on both sides to prevent sticking.

Wrap the dough in cling film and refrigerate for 30 minutes to let the butter set and harden.

After 30 minutes, roll the dough again to a length of 30cm.

Fold the dough into thirds for the second time, sprinkling flour on both sides.

Wrap the dough in cling film and refrigerate for 15 minutes.

After 15 minutes, repeat the rolling and folding process two more times.

Fold the dough into thirds for the third time and then for the fourth time, refrigerating for 15 minutes each time after folding.

After the fourth fold, sprinkle flour and roll the dough into a square shape, 5 mm thick.

Trim the sides of the dough.

Sprinkle granulated sugar on the dough.

Fold the dough in half and mark the center line.

Fold one more time as shown in the video, then fold both sides together like closing a book.

Sprinkle sugar on top and wrap in cling film, refrigerating for 20 minutes to firm up.

After 20 minutes, use a sharp knife to slice the log into 5 mm thick slices.

Line a baking sheet with parchment paper, reserving space between each block.

Heat the oven to 180°C and place a rack in the middle position.

Bake in the preheated oven for 20 to 25 minutes until golden.

After 25 minutes, the cookies should look golden and crispy, sprinkle sugar on top if desired.
