Hollow out the Italian loaf and set aside the insides for breadcrumbs.
Brush olive oil inside the hollowed-out bread.
Preheat the oven to 350 degrees Fahrenheit and place the bread in the oven until browned on the outside.
Cook the sweet honey garlic sausage in a skillet until browned, then remove it from the skillet and let it drain.
In the same skillet, add chopped onions and julienned red and green peppers, and sauté until tender.
Remove the sautéed vegetables from the skillet and set aside.
Beat 6 eggs in a bowl, then add a pinch of basil and parsley, and mix well.
Add the cooked sausage and sautéed vegetables to the egg mixture, stirring to combine.
Pour the egg mixture back into the skillet and scramble until just set, then add grated mozzarella cheese and stir until melted.
Transfer the mixture into the hollowed bread bowl, pressing it down firmly.
Top the mixture with provolone cheese and place it under the broiler for a few minutes until the cheese is melted and bubbly.
Remove from the oven and let cool for 10 minutes before slicing and serving.
