In a large soup pot with a lid, add oil, onions, garlic and salt. Sweat on medium-low heat until onions are translucent, about 6-10 minutes with the lid on.

Add carrots, ginger, turmeric, and black pepper and cook with the lid on for about 15-20 minutes, until the carrots are soft.

Add water and simmer on low for about 30 minutes.

Purée soup in a blender, or blend with an immersion blender, until you reach the desired consistency.
