Spread dry hurricane beans evenly on a flat surface to check for bad beans.
Soak beans in water for 5 hours, covering with a cloth.
Peel the onion, keeping it whole for flavor, and crush the garlic slightly.
Chop the red bell pepper into 3-4 pieces, and chop carrots into larger chunks.
Cut the parsnip and celeriac into similar sizes as the carrots.
Tie the parsley leaves together with a string for easy removal later.
Add 3 bay leaves to the vegetable mix.
Chop smoked ribs into preferred sizes and add to the pot.
Drain the soaked beans and add them to a large pot with the ribs and enough water to cover by 1 inch.
Add 1 tablespoon of salt and 1/4 teaspoon of black pepper, then cover and cook for about 2 hours.
Remove some vegetables for extra flavor after 2 hours of simmering.
Mix 500 milliliters of sour cream, 1 egg yolk, and 2 tablespoons of white flour in a bowl until homogeneous.
Temper the sour cream mixture with 4-5 ladles of hot soup before adding it to the pot.
Add 1 tablespoon of white wine vinegar and simmer for 2 more minutes.
Smash a peeled white onion in a kitchen cloth to enhance its flavor and serve it alongside the soup.
