Nutritional yeast is lower in fat and adds a cheesy flavor, while processed cheese is often cheaper.

In a large pot, melt 1 ½ sticks of butter over medium heat.

Add diced onions and minced garlic, sauté until translucent.

Stir in 2 cups of broccoli florets and 1 ½ quarts of vegetable/chicken broth, bring to a boil.

Add 1 cup of flour and stir to combine, then reduce heat and simmer until broccoli is tender.

Blend the soup until smooth using an immersion blender.

Stir in 4 oz of half & half and 3 cups of sharp cheddar cheese until melted.

Season with table ground black pepper and salt to taste.

Serve hot, garnished with the reserved ½ cup of broccoli florets and extra cheese if desired.
