In a large pot melt the butter, add chopped onion and sauté for 4-5 minutes, add the garlic and sauté for 1 minute.

Add the flour and cook, while whisking, for about 1-2 minutes, until it turns golden. Pour in the stock. Then add the chopped broccoli, grated carrot, salt, pepper, and paprika.

Bring to a boil, then reduce the heat to low and simmer for 15 minutes.

Add the cream, cheddar cheese, and stir. Cook for 1-2 minutes.

Serve!
