Heat olive oil in a 12-inch cast iron skillet.

Add 6 chicken legs to the skillet and brown them slightly.

Remove chicken and add 3 tablespoons of ghee to the skillet.

Saute 1 chopped onion, 1 crushed chili pepper, and 1 tablespoon of ginger in the ghee.

Slice and add 3 tomatoes to the skillet.

Poke holes in 2 dried limes and add them to the skillet.

Grind 1 cinnamon stick, 5 green cardamom pods, and 4 cloves in a mortar and pestle, and add to the skillet.

Add ground turmeric and sprinkle it over the chicken.

Turn the chicken in the skillet to coat it with spices and oil.

Add the sliced tomatoes to the skillet.

Add paprika and allspice to the mixture.

Pour in 4 cups of chicken stock and cover the skillet.

Let the mixture simmer for one hour.

After an hour, remove the chicken and add 2 cups of rice to the skillet.

Decide whether to return the chicken to the skillet or leave it out during the rice cooking process.
