Mexican Chunky Beef & Potato Stew

Heat olive oil in a large pot over medium-high heat until shimmering.
Season beef chuck with salt and black pepper, then add to the pot.
Sear the beef until browned on all sides, about 5-7 minutes.
Remove the beef from the pot and set aside.
Add chopped onions and garlic to the pot; sauté until softened, about 3-4 minutes.
Stir in diced tomatoes and cook for another 2 minutes.
Return the beef to the pot and add beef broth, cumin, oregano, and bay leaves.
Bring the mixture to a boil, then reduce heat to low and cover.
Simmer for 1.5-2 hours until the beef is tender.
Add diced potatoes and carrots to the pot; stir to combine.
Cover and continue to simmer for an additional 30-40 minutes until vegetables are tender.
Taste and adjust seasoning with salt and pepper as needed.
Remove bay leaves before serving.
Garnish with chopped cilantro and a squeeze of lime juice before serving.
