Cut sausages into sizable pieces and set aside.

In a suitable saucepan, add 9 tablespoons of cooking oil and heat until hot.

Add the sausage pieces to the hot oil and fry for about 15 minutes, turning them after 4 minutes and covering them to cook on the lowest setting.

While the sausages are frying, prepare the other ingredients: cut up the onion, grate the garlic and ginger, and halve the tomatoes before grating them to make crushed tomatoes.

After 8 minutes of frying the sausages, remove them from the pan and set them aside on a platter lined with paper towels.

In the same pan, on medium-high heat, add the chopped onion and fry until golden.

Once golden, add the grated garlic and ginger, stirring until it reaches a dark golden color without burning.

Add the crushed tomatoes and stir until well incorporated with the onion, garlic, and ginger mixture.

Add tomato paste and stir until well mixed, then cover and cook for 2 minutes.

After 2 minutes, stir the mixture and add salt, pilo masala, and turmeric powder, mixing well before covering and cooking for another 2 minutes on low flame.

Add washed and drained rice to the mixture, stirring until the rice is well coated and the wetness is mostly gone.

Add hot water to the rice mixture, stir well, cover, and bring to a simmer.

Once simmering, lower the heat to the lowest setting and cook for 15 to 20 minutes until the water is absorbed.

After cooking, add the sausages back into the rice and stir gently with a fork to combine without crushing the rice.

Cover and allow to cook for an additional 10 minutes before fluffing with a fork and garnishing with cilantro.
