Start by heating the Ninja Foodi on Sear and Sauté mode.
Spray the bottom of the pot with a little bit of spray oil to lubricate it.
Season chicken breasts with black pepper, salt, and a sprinkle of paprika, rubbing it in.
Cook the chicken until golden on both sides, about 5-10 minutes; it won’t be fully cooked through yet.
Remove the chicken and set aside, keeping the flavorful bits in the pot.
Add chopped spring onions and crushed chilies to the pot; sauté for a couple of minutes until softened.
Add lime zest and fresh ginger (or lazy ginger) to the pot; stir well to combine.
If using fresh garlic, add it now; if using garlic granules, wait until later to add them.
Pour in 100 milliliters of chicken stock and stir.
Add 400 milliliters of coconut milk and 100 milliliters of coconut cream to the pot; mix well.
Add a tablespoon of soy sauce to the mixture.
Return the chicken to the pot, including any juices that have accumulated.
Bring the mixture to a simmer, adjusting the heat to maintain a gentle bubbling.
Leave the lid open to allow the sauce to reduce and thicken; simmer for 10-15 minutes.
If the sauce is too thin, make a cornflour slurry with a tablespoon of cornflour mixed with water and add it to the sauce, stirring to avoid lumps.
Check the chicken for doneness with a thermometer; ensure it is cooked through.
Add a little lime juice and a splash of fish sauce to balance the flavors; mix well.
Serve the lime and coconut chicken with jasmine rice cooked using the pot in pot method.
