1

Marinate the smoked turkey necks and wings with 1 Maggi cube, 2 tablespoons chicken seasoning, and 1 tablespoon pink Himalayan salt.

2

Add 5 to 10 cloves and 1/2 cup of apiece to the marinated meat.

3

Add 3 tablespoons of olive oil to the marinated meat and stir to coat evenly. Let it marinate for a few hours, preferably 24 hours.

4

Peel and cut 7 to 10 large eggplants and a few bits of carrots.

5

Place the eggplants on top of the marinated turkey in the pot.

6

Cover the pot with a plastic bag or foil and cook until the eggplant shrinks.

7

Remove the cooked eggplant from the pot and place it in a bowl, discarding excess liquid to avoid splashing while mashing.

8

Chop the carrots and add them to the pot, stirring to prevent sticking.

9

Add thyme and parsley to the pot and stir, then cover for about 5 minutes.

10

Remove the cover and add tomato paste to the pot (optional) for color, keeping the heat on low to medium low.

11

Mash the cooked eggplant using a pestle or potato masher and add it back to the pot, stirring to combine everything evenly.

12

Adjust seasoning with salt and add 1 tablespoon of sour orange juice and 2 tablespoons of butter before turning off the heat.
