Cut the passion fruits in half and scoop out the insides, including the seeds.

Cut the ginger into thin slices.

Add the passion fruit insides and ginger slices to the blender.

Blend for about 30 seconds, ensuring not to pulverize the seeds.

Strain the mixture through a fine sieve to remove seeds and bits.

Add another cup of water to the blender with the strained mixture and blend again.

Strain the mixture a second time to remove remaining solids.

Sweeten the drink to taste with sugar and add more water if desired.

Serve the drink over ice cubes in a glass.
