Posho, a staple in Ugandan cuisine, is made from maize flour and is often served alongside stews or grilled meats. Traditionally, it is a communal dish, enjoyed during family meals and celebrations. Its simplicity and versatility have made it a beloved staple not only in Uganda but across East Africa, where variations exist under different names like Ugali in Kenya and Sadza in Zimbabwe.

Whole grain flour adds nutrients while cornmeal is often less expensive.

Boil water in a large pot over medium heat until bubbling.
Add salt to the boiling water and stir to dissolve.
Gradually add maize flour to the pot while stirring continuously to avoid lumps.
Continue stirring until the mixture thickens, about 5-7 minutes.
Reduce heat to low and cover the pot, cooking for an additional 5 minutes.
Stir again vigorously until the posho is smooth and pulls away from the sides of the pot.
Remove from heat and let it sit for a few minutes before serving.
