Heat 2 tablespoons of oil in a pot over low heat.
Fry the chopped onion for about 15 minutes.
Add 4 cloves of garlic and 1 teaspoon of grated ginger; fry for another 5 minutes.
Add the spices: 1 teaspoon of cumin, 1 teaspoon of coriander, and half a teaspoon of turmeric; stir well.
Immediately add 250 grams of pureed tomatoes and let the mixture simmer for about 10 minutes.
Add 200 milliliters of coconut milk, 200 milliliters of water, and the cooked kidney beans; mix well.
Cover and let the stew simmer for about 20 minutes over low heat.
For a creamier consistency, mash some of the beans directly in the pot and let it simmer for another 5 minutes.
Garnish with fresh cilantro before serving.
